American loathe insects. We hate them. We swat them. We spend millions to annihilate them. But over the last few years, words like sustainability, waste, climate change, and hunger have been paired with species like ants, crickets, mealworms, and stink bugs. According to a startling report by the United Nations about global food security, by the year 2050, when the global population is expected to balloon to an estimated 9.2 billion people world-wide, humankind will have to increase its food production by a staggering 70 percent if it is to avoid mass starvation. But with shrinking global resources such as fresh water and arable land, feeding everyone will be one of the biggest challenge’s humanity will face. One of the solutions being researched and considered: eating bugs.
